Description

Delicious stuffed bell peppers filled with ground turkey, quinoa, and cottage cheese.


Ingredients

  • 6 large bell peppers (any color, tops & seeds removed)
  • 1 pound ground turkey
  • 1 cup cottage cheese (blend for a smoother texture or keep it chunky!)
  • 1 cup cooked quinoa
  • 1 14 oz can diced tomatoes (canned)
  • 1/2 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 tsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt & black pepper
  • 1/2 cup shredded mozzarella (for topping)
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 375°F and lightly grease a baking dish.
  2. Slice the tops off each bell pepper and remove the seeds and membranes. Set the hollowed-out peppers aside.
  3. Heat olive oil in a skillet over medium heat. Add the diced onion and garlic and sauté for about 2 minutes until soft and fragrant.
  4. Add the ground turkey and cook until browned, breaking it up as it cooks.
  5. Stir in the diced tomatoes, quinoa, Italian seasoning, salt, and pepper. Let it all simmer for another 2 minutes, then remove from heat.
  6. Once the mixture has cooled slightly, stir in the cottage cheese until fully combined. You can blend the cottage cheese ahead of time for a smoother texture or leave it as-is for a chunkier filling.
  7. Spoon the filling evenly into each prepared bell pepper and stand them upright in your baking dish.
  8. Cover the dish with foil and bake for 25 minutes. Remove the foil, sprinkle with shredded mozzarella, and bake uncovered for another 10 minutes, or until the peppers are tender and the cheese is melted and golden.
  9. Top with fresh basil or parsley and serve warm. These pair perfectly with a light salad or roasted veggies!
