Chinese Noodles with Sesame and Peanuts

Description

A delicious and easy recipe for Chinese noodles tossed in a creamy sesame sauce, topped with fresh vegetables and crunchy peanuts.


Ingredients

Scale
  • 1 lb fresh Chinese wheat noodles (or noodles of your choice)
  • 2 tablespoons Chinese sesame paste
  • 2 tablespoons peanut butter (creamy or chunky)
  • 1 1/2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon Chinese black vinegar
  • 1 tablespoon chili oil
  • 1 teaspoon sesame oil
  • 1 tablespoon sugar
  • 2 cloves garlic (grated or finely minced)
  • 1 teaspoon ginger (grated or finely minced)
  • 1/2 cup hot noodle water
  • 1 stalk green onions (chopped)
  • 1 small cucumber (sliced into thin strips)
  • crushed peanuts

Instructions

  1. Cook the noodles. Boil the noodles according to the package instructions. Reserve 1/2 cup of hot noodle water. Drain and set aside.
  2. Mix the sauce. In a small bowl, whisk together the sesame paste, peanut butter, light soy sauce, dark soy sauce, Chinese black vinegar, chili oil, sesame oil, sugar, garlic, and ginger until well combined. Then slowly add the hot noodle water 1 tablespoon at a time until you reach your desired sauce consistency.
  3. Combine. Mix the sauce with the noodles until thoroughly coated. Add more hot water if the sauce is too thick or clumpy.
  4. Serve. Garnish with cucumber, green onion, peanuts, and more chili oil, and enjoy!

Notes

  • For an extra kick, adjust the amount of chili oil to taste.
  • Feel free to substitute the noodles with any type you prefer.
