Description

A deliciously easy peach and blueberry bake that combines fresh fruits with a buttery topping.


Ingredients

  • 4 cups fresh peaches peeled and sliced (or frozen, thawed)
  • 2 cups fresh blueberries
  • ½ cup sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ½ cup unsalted butter melted

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine peaches, blueberries, sugar, cornstarch, lemon juice, and vanilla. Toss until coated, then spread into the prepared baking dish.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt. Add milk and melted butter, stirring just until combined.
  4. Pour batter evenly over the fruit mixture (it will spread as it bakes).
  5. Bake for 40–45 minutes, until the topping is golden brown and fruit is bubbly.
  6. Cool slightly before serving.
