Delicious fruit cookie bars topped with a creamy layer, perfect for any occasion.
Ingredients

- 3/4 cup butter (softened)
- 1 cup sugar
- 1 egg
- 2 teaspoons vanilla
- 2 cups flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 8-ounce package cream cheese (softened)
- 2 tablespoons sour cream
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla
- 1 cup whipped topping
- 3–4 cups fruit
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a large bowl, combine the butter and sugar.
- Stir in the egg and vanilla.
- Lastly, add the dry ingredients and mix until a dough is formed.
- Press the dough onto the prepared baking sheet into an 8×13 inch rectangle (more size options in notes below).
- Bake for 12-15 minutes or until outer edges are golden brown; don’t over-bake. Let cool completely.
- Add the softened cream cheese to a large bowl and stir until smooth.
- Stir in the sour cream, powdered sugar and vanilla extract.
- Once smooth, fold in the whipped topping.
- Spread the topping over the cooled cookie crust.
- Add fruit in whatever pattern desired.
- Refrigerate until ready to serve.
Notes
- For a different size, you may adjust the baking sheet accordingly.
- Try using seasonal fruits for a fresh twist!
