Description

Delicious fruit cookie bars topped with a creamy layer, perfect for any occasion.


Ingredients

Scale
  • 3/4 cup butter (softened)
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 8-ounce package cream cheese (softened)
  • 2 tablespoons sour cream
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1 cup whipped topping
  • 34 cups fruit

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the butter and sugar.
  3. Stir in the egg and vanilla.
  4. Lastly, add the dry ingredients and mix until a dough is formed.
  5. Press the dough onto the prepared baking sheet into an 8×13 inch rectangle (more size options in notes below).
  6. Bake for 12-15 minutes or until outer edges are golden brown; don’t over-bake. Let cool completely.
  7. Add the softened cream cheese to a large bowl and stir until smooth.
  8. Stir in the sour cream, powdered sugar and vanilla extract.
  9. Once smooth, fold in the whipped topping.
  10. Spread the topping over the cooled cookie crust.
  11. Add fruit in whatever pattern desired.
  12. Refrigerate until ready to serve.

Notes

  • For a different size, you may adjust the baking sheet accordingly.
