Ingredients

  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Flaky sea salt (for sprinkling)

Instructions

  1. Make the filling: In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Scoop small portions and freeze for 15 minutes.
  2. Prepare cookie dough: Cream butter and sugars until light and fluffy. Beat in egg and vanilla.
  3. Add flour, baking soda, and salt. Mix just until combined.
  4. Assemble cookies: Scoop dough, flatten slightly, place frozen cheesecake filling in the center, and seal dough around it.
  5. Bake: Place on a lined baking sheet and bake at 350°F (175°C) for 12–14 minutes until edges are set.
  6. Finish: Sprinkle warm cookies with flaky sea salt. Cool before serving.
