- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- ½ tsp baking soda

- 4 oz cream cheese, softened
- 3 tbsp powdered sugar
- ½ tsp vanilla extract
- Flaky sea salt (for sprinkling)
Instructions
- Make the filling: In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Scoop small portions and freeze for 15 minutes.
- Prepare cookie dough: Cream butter and sugars until light and fluffy. Beat in egg and vanilla.
- Add flour, baking soda, and salt. Mix just until combined.
- Assemble cookies: Scoop dough, flatten slightly, place frozen cheesecake filling in the center, and seal dough around it.
- Bake: Place on a lined baking sheet and bake at 350°F (175°C) for 12–14 minutes until edges are set.
- Finish: Sprinkle warm cookies with flaky sea salt. Cool before serving.
Notes
- Ensure the cheesecake filling is properly frozen to avoid melting during baking.
- Feel free to add chocolate chips to the cookie dough for an extra treat.
