Chocolate Peanut Butter Fudge Cups

Description

A delicious treat combining chocolate and peanut butter in a mini muffin cup format.


Ingredients

Scale
  • 1/2 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 Tbsp peanut butter for decoration

Instructions

  1. Preheat oven to 325 degrees F and spray a mini muffin pan with cooking spray.
  2. Cream butter, peanut butter and sugar together.
  3. Add the egg and vanilla and mix well.
  4. Add in flour, baking soda, and salt and mix until combined.
  5. Roll 1 Tbsp of dough into a ball (or use a cookie scoop to expedite the process) and place each scoop or ball in the pan.
  6. Bake for 12 to 15 minutes or until lightly browned.
  7. Remove from oven and make wells in the center of each cookie using a 1 tsp measuring spoon. Press it well to create space for a lot of fudge.
  8. Cool in the pan for another 8-10 minutes and then remove the cookies to a wire rack.
  9. Cool for an additional 15 minutes.
  10. To make the chocolate filling, combine chocolate chips and sweetened condensed milk in a microwave-safe bowl and microwave on high for 1-2 minutes. Stir until evenly combined, then add vanilla and stir again.
  11. Transfer the filling into a ziplock bag, squeeze it into a corner and snip the corner off. Pipe the fudge into the cups, filling them well—the chocolate should rise above the cookie and will set quickly.
  12. If the chocolate filling becomes too solid, microwave it for 10-15 seconds to soften.
  13. Warm about 1 Tbsp of peanut butter and drizzle it over the chocolate cups using a small ziplock bag.
