Description

Delicious stuffed baked potatoes filled with ground beef, black beans, corn, and topped with fresh ingredients.


Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup sliced black olives
  • ¼ cup chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes, prick with a fork, coat with olive oil, salt, and pepper. Bake for 45-60 minutes until tender.
  3. In a skillet over medium heat, brown the ground beef and drain excess fat. Add taco seasoning and mix well.
  4. In a mixing bowl, combine black beans, corn, diced tomatoes, salt, and pepper.
  5. Once cooled slightly, cut open each potato lengthwise and fluff the insides with a fork. Layer in the beef mix followed by the bean mixture.
  6. Top with lettuce, cheddar cheese, sour cream, olives, and green onions.
  7. Serve immediately and let everyone personalize their bowls.
