Description

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp poppy seeds
  • ¾ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup whole milk (or almond milk)
  • 2 large eggs
  • 1 lemon, zest and juice
  • ½ cup melted butter

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, salt, and poppy seeds.
  3. In another bowl, mix sugar, eggs, melted butter, milk, lemon zest, and juice until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Fill muffin cups two-thirds full with batter.
  6. Bake for 18-20 minutes or until golden brown; cool slightly before serving.
