Description

Delicious no-bake protein balls made with cranberries, pistachios, and nut butter.


Ingredients

  • 1 cup dried cranberries (unsweetened)
  • 1 cup shelled pistachios (chopped)
  • 1 scoop (30g) protein powder (vanilla recommended)
  • 1/4 cup honey or maple syrup
  • 1/2 cup peanut butter or almond butter
  • 2 tbsp chia seeds
  • 1/4 cup unsweetened coconut flakes (optional)

Instructions

  1. In a large bowl, combine cranberries, chopped pistachios, protein powder, chia seeds, and coconut flakes.
  2. Add honey (or maple syrup) and nut butter; stir until it forms a sticky mixture.
  3. Refrigerate for 15-20 minutes to firm up.
  4. Scoop out portions and roll into bite-sized balls.
  5. Store in an airtight container in the fridge for easy snacking.
