Description
A delicious and simple recipe for garlic chicken served with cherry tomatoes and fresh basil pasta.
Ingredients

- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 2 cups cherry tomatoes, halved
- 1 cup fresh basil leaves, chopped
- 8 oz pasta (penne or spaghetti)
- 2 tbsp extra virgin olive oil
- ½ cup grated Parmesan cheese
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Prepare ingredients by chopping tomatoes and mincing garlic.
- Heat olive oil in a pan over medium heat, season chicken with salt and pepper, and cook until golden brown (6-7 minutes per side). Remove from pan.
- In the same pan, add garlic and sauté until fragrant (about 30 seconds). Add tomatoes and cook until softened.
- Drizzle balsamic vinegar into the pan and drain but reserve some pasta water.
- Combine cooked pasta with the chicken-tomato mixture. Stir in basil and Parmesan cheese; adjust consistency with reserved pasta water if needed.
- Serve warm, garnished with additional basil or cheese if desired.
Notes
- This dish can be customized with your preferred type of pasta.
- Leftovers can be stored in the refrigerator for up to 3 days.
