Description

A delicious and simple recipe for garlic chicken served with cherry tomatoes and fresh basil pasta.


Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 8 oz pasta (penne or spaghetti)
  • 2 tbsp extra virgin olive oil
  • ½ cup grated Parmesan cheese
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping tomatoes and mincing garlic.
  2. Heat olive oil in a pan over medium heat, season chicken with salt and pepper, and cook until golden brown (6-7 minutes per side). Remove from pan.
  3. In the same pan, add garlic and sauté until fragrant (about 30 seconds). Add tomatoes and cook until softened.
  4. Drizzle balsamic vinegar into the pan and drain but reserve some pasta water.
  5. Combine cooked pasta with the chicken-tomato mixture. Stir in basil and Parmesan cheese; adjust consistency with reserved pasta water if needed.
  6. Serve warm, garnished with additional basil or cheese if desired.
