Description

A refreshing and creamy pasta salad with a tropical twist.


Ingredients

  • 1 cup acini di pepe pasta
  • 1 cup milk
  • 1 package (3 oz) instant vanilla pudding mix
  • 1 container (8 oz) Cool Whip
  • 1 cup canned pineapple chunks (drained)
  • 1 cup canned mandarin oranges (drained)
  • 1 cup mini marshmallows
  • ½ cup shredded coconut (optional)

Instructions

  1. Cook the acini di pepe pasta in salted boiling water until al dente (about 8-10 minutes). Drain and cool under cold water.
  2. In a large bowl, whisk together the vanilla pudding mix and milk until smooth. Let sit for 5 minutes to thicken.
  3. Gently fold in the Cool Whip until fully incorporated into the pudding mixture.
  4. Add the cooled pasta, pineapple chunks, mandarin oranges, mini marshmallows, and shredded coconut if desired. Mix gently to combine.
  5. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
