A refreshing and creamy pasta salad with a tropical twist.
Ingredients

- 1 cup acini di pepe pasta
- 1 cup milk
- 1 package (3 oz) instant vanilla pudding mix
- 1 container (8 oz) Cool Whip
- 1 cup canned pineapple chunks (drained)
- 1 cup canned mandarin oranges (drained)
- 1 cup mini marshmallows
- ½ cup shredded coconut (optional)
Instructions
- Cook the acini di pepe pasta in salted boiling water until al dente (about 8-10 minutes). Drain and cool under cold water.
- In a large bowl, whisk together the vanilla pudding mix and milk until smooth. Let sit for 5 minutes to thicken.
- Gently fold in the Cool Whip until fully incorporated into the pudding mixture.
- Add the cooled pasta, pineapple chunks, mandarin oranges, mini marshmallows, and shredded coconut if desired. Mix gently to combine.
- Cover with plastic wrap and refrigerate for at least 2 hours before serving.
Notes
- This salad can be made a day in advance for maximum flavor.
- Feel free to substitute fruit based on your preferences.
