This refreshing pineapple salad is perfect for summer parties and gatherings!
Ingredients

- 20 ounces crushed pineapple (do not drain)
- 3 ounces instant vanilla pudding mix
- 8 ounces Cool Whip (thawed)
- 2 cups mini marshmallows
- 1 cup shredded sweetened coconut (optional)
- 1 cup mini marshmallows (for topping)
- 1 cup shredded coconut (for topping)
- 1 cup chopped pecans (for topping)
- 1 cup pineapple tidbits (for topping)
Instructions
- In a large bowl, stir together crushed pineapple with juices and instant pudding mix.
- Fold in thawed Cool Whip.
- Stir in mini marshmallows and shredded coconut.
- Chill in the refrigerator for 1 hour before serving.
- Serve in bowls topped with marshmallows, coconut, pineapple tidbits, and chopped pecans. Enjoy!
