- 1 pound boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 cup vegetable oil
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup pineapple chunks
- 1/2 cup onion, chopped
- 2 teaspoons minced garlic
- 1/2 cup sugar
- 1/2 cup white vinegar
- 1/4 cup ketchup
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions
- Season chicken with salt and pepper; coat with flour and cornstarch mixture.
- Heat oil in a skillet over medium-high heat; fry chicken until golden brown (5-7 minutes). Drain on paper towels.
- In the same skillet, sauté bell peppers, onion, and garlic until tender (3-4 minutes).
- Whisk together sugar, vinegar, ketchup; pour into skillet and simmer.
- Add cornstarch mixed with water to thicken sauce (1-2 minutes).
- Combine fried chicken and pineapple in the skillet; toss to coat and heat through (2 minutes).
- Serve immediately garnished with sesame seeds and green onions.
Notes
- This dish can be served with rice or noodles for a complete meal.
- Adjust the sweetness by modifying the sugar and vinegar to your taste.
