- 12 oz rotini pasta

- 4 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1 ½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- Fresh parsley (optional, for garnish)
Instructions
- Cook the rotini: Start by boiling a large pot of salted water. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
- Prepare the chicken: While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the diced chicken with garlic powder, onion powder, paprika, salt, and pepper. Cook the chicken in the hot skillet until golden brown and fully cooked through, about 6–8 minutes. Remove the chicken from the pan and set it aside.
- Make the garlic cheese sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 30 seconds, just until fragrant. Stir in the flour and cook for another minute to form a roux.
- Build the creamy base: Slowly whisk in the chicken broth and milk, making sure there are no lumps. Let the mixture simmer for 3–5 minutes until it starts to thicken.
- Add the cheese: Stir in the shredded cheddar and Parmesan cheeses until the sauce is creamy and smooth.
- Bring it all together: Return the cooked chicken to the skillet and fold in the rotini. Stir until everything is well coated in the cheesy garlic sauce.
- Serve and enjoy: Spoon the cheesy rotini onto plates and garnish with chopped parsley for a pop of freshness.
