Description
A delicious creamy soup made with cauliflower and fennel.
Ingredients
Scale
- 1 head cauliflower (florets)
- 1/2 bulb fennel (chopped)
- 2 tbsp olive oil
- 1 shallot (diced)
- 3 cloves garlic (minced)
- 2 cups Nature’s Promise vegetable broth
- to taste salt
- to taste pepper
Instructions
- In a medium heavy pot, heat oil.
- Add in shallot, garlic, and fennel and sauté until slightly softened and fragrant. Do not let them brown. Season with salt and pepper.
- Add in cauliflower florets and broth.
- Cover, turn heat down to a simmer, and cook for 20-25 minutes until cauliflower has softened.
- Transfer soup contents to a blender cup, reserving about 1/2 to 3/4 cup of the broth to use if needed to adjust the consistency of the soup.
- Blend until smooth and creamy.

- Reserve some broth to adjust soup consistency if needed.
