Description

Delicious cookies filled with creamy mascarpone frosting and a hint of espresso, perfect for any occasion.


Ingredients

  • ½ cup softened butter
  • ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1¼ cups flour
  • ¼ cup cocoa powder
  • 1 teaspoon espresso powder
  • ½ teaspoon baking powder
  • Pinch of salt
  • ½ cup mascarpone cheese
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream
  • Cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar together until light. Add egg and vanilla then mix until smooth.
  3. Mix flour, cocoa, espresso powder, baking powder, and salt then add to wet ingredients and combine into a soft dough.
  4. Roll tablespoon portions into balls, slightly flatten, and bake for 10 to 12 minutes.
  5. Cool cookies completely on a rack.
  6. Beat mascarpone and powdered sugar then add heavy cream to form a smooth frosting.
  7. Pipe frosting onto cooled cookies and dust with cocoa powder.

  • For best results, let the butter soften at room temperature for about 30 minutes before using.
