Description

Light and refreshing sandwiches perfect for a snack or tea time.


Ingredients

  • 1 large Cucumber (thinly sliced)
  • 8 oz Cream Cheese (softened)
  • 2 tbsp Fresh Dill (chopped)
  • 4 slices Sourdough Bread
  • 2 tbsp Chives (finely chopped)
  • to taste Salt and Pepper

Instructions

  1. Wash and thinly slice fresh cucumbers into 1/8-inch rounds.
  2. In a bowl, combine cream cheese, mayonnaise, and a pinch of salt. Stir until smooth and creamy.
  3. Add fresh dill or chives to the cream cheese mixture and mix well.
  4. Spread a generous layer of the herb-infused cream cheese on one slice of bread, layer with cucumber slices, and top with another slice of bread.
  5. Using a shamrock-shaped cookie cutter, cut out your sandwiches.
  6. Arrange the sandwiches on a platter and serve immediately.

Notes

  • For a richer flavor, consider adding a pinch of garlic powder to the cream cheese mixture.
  • These can be made ahead of time; however, consume within a few hours for best texture.
