Light and refreshing sandwiches perfect for a snack or tea time.
Ingredients

- 1 large Cucumber (thinly sliced)
- 8 oz Cream Cheese (softened)
- 2 tbsp Fresh Dill (chopped)
- 4 slices Sourdough Bread
- 2 tbsp Chives (finely chopped)
- to taste Salt and Pepper
Instructions
- Wash and thinly slice fresh cucumbers into 1/8-inch rounds.
- In a bowl, combine cream cheese, mayonnaise, and a pinch of salt. Stir until smooth and creamy.
- Add fresh dill or chives to the cream cheese mixture and mix well.
- Spread a generous layer of the herb-infused cream cheese on one slice of bread, layer with cucumber slices, and top with another slice of bread.
- Using a shamrock-shaped cookie cutter, cut out your sandwiches.
- Arrange the sandwiches on a platter and serve immediately.
Notes
- For a richer flavor, consider adding a pinch of garlic powder to the cream cheese mixture.
- These can be made ahead of time; however, consume within a few hours for best texture.
