A delicious and nutritious one-skillet meal featuring ground turkey, sweet potatoes, and black beans.

- 1 lb Ground turkey
- 2 cups Sweet potatoes, peeled and diced
- 1 can Black beans, drained and rinsed
- 2 tbsp Olive oil, for sautéing
- 1 medium Onion, finely chopped
- 2 cloves Garlic, minced
- 1 medium Bell pepper, diced
- 1 tsp Cumin
- 1 tbsp Chili powder, adjust to taste
- to taste Salt & pepper, for seasoning
Instructions
- Prepare the sweet potatoes by peeling and dicing them into small cubes.
- Sauté the onions in a large skillet over medium heat until they become translucent, about 5 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, roughly 7-10 minutes.
- Incorporate the diced sweet potatoes, black beans, and spices into the mixture. Stir well and cover, cooking for about 15 minutes until the sweet potatoes are tender.
- Taste and adjust seasoning as needed.
Notes
- This dish is perfect for meal prep and leftovers can be stored in the fridge for up to 3 days.
- Feel free to add more veggies like spinach or corn for variety.
