Key Ingredients for Easy Roasted Red Pepper Soup with Gouda and Tomatoes

Roasting red peppers brings out their natural sweetness, and this easy roasted red pepper soup perfectly showcases their rich flavor. The following ingredients are essential for crafting a warm bowl of comfort that will impress your friends and family.

  • Red Peppers: Choose ripe, sweet red peppers for the best taste. Roasting them elevates their sweetness and adds a lovely smoky flavor to the soup. If you find yourself short on fresh peppers, jarred roasted red peppers can be a great alternative.

  • Tomatoes: Fresh tomatoes contribute acidity and freshness to balance the sweetness. For added flavor, you can use canned fire-roasted tomatoes, which blend seamlessly into the soup.

  • Gouda Cheese: This creamy cheese adds depth and a velvety texture to your soup. Opt for smoked Gouda for an extra layer of flavor, or use mild Gouda for a subtler experience.

  • Onion and Garlic: These aromatics form the base of the soup, providing rich flavor and aroma. Sautéing onions until they’re golden enhances their sweetness, while garlic adds a pop of zest.

  • Vegetable Broth: This liquid component provides the necessary body and richness for your soup. Low-sodium vegetable broth is ideal to control the saltiness while allowing the flavors of the peppers and tomatoes to shine.

  • Olive Oil: Use good quality olive oil for sautéing and drizzling over the top before serving, adding a delightful finish to your easy roasted red pepper soup.

Tips for Making Perfect Easy Roasted Red Pepper Soup

Creating an easy roasted red pepper soup can feel like a culinary adventure, especially when unexpected flavors come together to warm your soul. Here are some helpful tips to ensure your soup not only delights your taste buds but also impresses friends and family alike.

Choose the Best Peppers

Selecting the right red peppers is crucial. Look for ones with shiny skin and a firm texture. Roasting enhances their sweetness, so opting for fresh, ripe peppers makes a big difference in flavor.

Roasting Techniques Matter

Make sure to roast your peppers until the skin is blistered and charred, which adds a lovely smoky flavor. You can do this in the oven or over an open flame. Don’t rush the process; it’s worth the wait.

Balance Your Flavors

When blending your ingredients, remember that balance is key. Adding a bit of acidity—like a splash of balsamic vinegar or a squeeze of lemon juice—can elevate the soup’s flavor profile and bring out the sweetness of the peppers.

Perfect Consistency

For a silky texture, use an immersion blender. If you prefer a chunkier soup, reserve some roasted peppers before blending. This adds depth and visual appeal to your easy roasted red pepper soup.

Final Touches

Garnish with freshly shredded Gouda and a drizzle of olive oil just before serving. It’s these little details that transform a simple soup into a gourmet dish. Enjoy crafting this delightful recipe!

  • Total Time: 1 hour
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A delicious roasted bell pepper and gouda cheese soup that’s perfect for any season.

Ingredients

Scale
  • 3 red bell peppers
  • 4 roma tomatoes
  • 3 large carrots
  • 1 small yellow onion (or half large)
  • 1 bulb of garlic
  • 2 Tbsp extra virgin olive oil (or avocado oil)
  • 1 Tbsp fresh oregano (or 1 tsp dried oregano)
  • 1 tsp dried thyme (or 1 Tbsp fresh thyme)
  • 1 tsp smoked paprika
  • ½ tsp red pepper flakes
  • 1 tsp kosher salt (more to taste)
  • ¼ tsp black pepper
  • 34 cups chicken broth (or vegetable broth)
  • 2 oz Gouda cheese (regular or smoked)

Instructions

  1. Preheat your oven to 400℉. Line a baking sheet (sheet pan) with parchment paper for easy clean up. Spray with cooking spray. Rough chop red bell peppers, tomatoes, carrots, and onion. Cut the top end off a bulb of garlic.
  2. Place the red bell peppers (skin side up), tomatoes, carrots, onion, and bulb of garlic on the prepared baking sheet. Drizzle the olive oil, oregano, thyme, smoked paprika, red pepper flakes, salt, & pepper on top, making sure everything is coated.
  3. Roast in the preheated oven for 35-45 minutes. Oven times will vary. When the vegetables are done roasting, the red bell pepper will have charred skins. You want this to add depth of flavor to the soup.
  4. Add the roasted vegetables except the garlic to a high-speed blender. To add the garlic cloves, carefully squeeze them out of the skin being careful not to get the skins in the blender. Add 3 cups of the chicken broth and gouda. Blend everything until smooth, pushing down the sides as needed with a rubber spatula.
  5. To heat the soup, pour it into a large stockpot and heat on medium heat until it starts to bubble. Then lower to medium-low or low heat for another minute or two. If it’s too thick, add 1 more cup of broth or a little water. Give it a taste and add additional salt as needed. *careful when handling hot liquid.
  6. Hint: if you don’t have a high-speed blender, you can add the soup ingredients including the roasted vegetables, broth, and Gouda cheese to a large pot and use an immersion blender to blend it.
