Beef and Mushroom Stir Fry

Description

A delicious beef and mushroom stir fry made with shaved beef, coconut milk, and fresh vegetables.


Ingredients

Scale
  • 1 lb shaved beef or stir fry beef
  • 1 tablespoon coconut oil
  • 1 large onion (thinly sliced)
  • 1 lb sliced mushrooms (button or crimini)
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dijon mustard
  • 3/4 cup canned coconut milk

Instructions

  1. Melt the coconut oil in a large pan on the stovetop on medium heat.
  2. Saute the onions for 5 minutes in the coconut oil.
  3. Add the sliced mushrooms and cook 3-5 minutes until they start to soften.
  4. Stir in the salt, pepper and dijon mustard.
  5. Turn up the heat to medium high and add the shaved beef to the same pan as the vegetables. Cook for 5 minutes until the meat is cooked through. If you’re using stir fry beef it could take a little longer than 5 minutes.
  6. Turn the heat down to medium low and add the coconut milk to the beef and vegetable mixture.
  7. Simmer 5 additional minutes until all of the ingredients are heated through.
  8. Serve and enjoy!

Notes

  • This dish can be served over rice or noodles for a complete meal.
