Description

Deliciously soft cookies with a burst of orange and sweet cranberries.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest (from about 1 orange)
  • 1/2 cup dried cranberries, chopped
  • 1/4 teaspoon almond extract (optional)
  • Extra powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. This should take about 3-4 minutes.
  3. Add the vanilla extract and almond extract (if you’re using it) to the butter mixture and mix well.
  4. In another bowl, whisk together the all-purpose flour and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined.
  5. Gently fold in the orange zest and chopped dried cranberries using a spatula or wooden spoon. Be careful not to overmix; you want the cranberries to be evenly distributed without crushing them.
  6. Turn the dough out onto a lightly floured surface. Shape it into a log or rectangle about 1 inch thick. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.
  7. Once chilled, slice the dough into 1/4 inch thick rounds and lay them on the prepared baking sheet, leaving some space between each cookie.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. Keep an eye on them as baking times can vary.
  9. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring the cookies to a wire rack.
  10. Once cooled completely, dust the cookies with extra powdered sugar if desired, and serve.
