Description
Delicious homemade soft pretzels that are warm, buttery and coated with cinnamon sugar.
Ingredients
Scale
- 1 ½ cups warm water (110°F to 115°F)
- 1 packet active dry yeast (2 ¼ teaspoons)
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour
- 1 teaspoon salt
- ¼ cup unsalted butter, melted
- ⅓ cup baking soda (for the water bath)
- ½ cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
- 4 tablespoons unsalted butter, melted (for brushing)
Instructions
- Activate the Yeast: In a large mixing bowl, combine warm water, yeast, and 1 tablespoon of sugar. Let it sit for 5–10 minutes until it becomes frothy. This means your yeast is alive and ready to go.
- Mix the Dough: Add flour, salt, and the first ¼ cup of melted butter to the yeast mixture. Stir until a dough forms, then knead on a floured surface for about 5–7 minutes until smooth and elastic. If you’re using a stand mixer, use the dough hook on medium speed for about 5 minutes.
- Let It Rise: Place the dough in a lightly greased bowl, cover with a towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Shape the Pretzels: Once risen, punch the dough down gently and divide it into 8 equal pieces. Roll each piece into a rope about 18–20 inches long. Twist each rope into a classic pretzel shape—make a “U,” cross the ends, then twist and press them onto the bottom of the loop.
- Baking Soda Bath: Preheat your oven to 400°F and line a baking sheet with parchment paper. In a large pot, bring about 8 cups of water to a boil. Carefully stir in the baking soda (it may bubble rapidly). Dip each shaped pretzel into the water bath for 20–30 seconds, then place them on the baking sheet.
- Bake Until Golden: Bake the pretzels in the preheated oven for 12–15 minutes, or until golden brown.
- Brush and Coat: While still warm, brush each pretzel generously with melted butter. In a shallow bowl, mix together the ½ cup of sugar and cinnamon. Toss the buttered pretzels in the cinnamon sugar mixture until evenly coated.
Notes
- The smell at this point is irresistible—warm butter, caramelizing sugar, and that familiar spice of cinnamon come together to make your kitchen smell like a bakery in the heart of fall.
