Description

Delicious homemade soft pretzels that are warm, buttery and coated with cinnamon sugar.


Ingredients

  • 1 ½ cups warm water (110°F to 115°F)
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • ¼ cup unsalted butter, melted
  • ⅓ cup baking soda (for the water bath)
  • ½ cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 4 tablespoons unsalted butter, melted (for brushing)

Instructions

  1. Activate the Yeast: In a large mixing bowl, combine warm water, yeast, and 1 tablespoon of sugar. Let it sit for 5–10 minutes until it becomes frothy. This means your yeast is alive and ready to go.
  2. Mix the Dough: Add flour, salt, and the first ¼ cup of melted butter to the yeast mixture. Stir until a dough forms, then knead on a floured surface for about 5–7 minutes until smooth and elastic. If you’re using a stand mixer, use the dough hook on medium speed for about 5 minutes.
  3. Let It Rise: Place the dough in a lightly greased bowl, cover with a towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Shape the Pretzels: Once risen, punch the dough down gently and divide it into 8 equal pieces. Roll each piece into a rope about 18–20 inches long. Twist each rope into a classic pretzel shape—make a “U,” cross the ends, then twist and press them onto the bottom of the loop.
  5. Baking Soda Bath: Preheat your oven to 400°F and line a baking sheet with parchment paper. In a large pot, bring about 8 cups of water to a boil. Carefully stir in the baking soda (it may bubble rapidly). Dip each shaped pretzel into the water bath for 20–30 seconds, then place them on the baking sheet.
  6. Bake Until Golden: Bake the pretzels in the preheated oven for 12–15 minutes, or until golden brown.
  7. Brush and Coat: While still warm, brush each pretzel generously with melted butter. In a shallow bowl, mix together the ½ cup of sugar and cinnamon. Toss the buttered pretzels in the cinnamon sugar mixture until evenly coated.
