Description

Delicious buffalo chicken taquitos that are crispy on the outside and packed with flavor.


Ingredients

  • 2 cups cooked shredded chicken (rotisserie or homemade)
  • 4 ounces cream cheese, softened
  • 1/3 cup buffalo sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 10 small flour tortillas (6-inch)
  • Cooking spray or oil for brushing

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Mix the filling: In a large bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, garlic powder, onion powder, salt, and pepper. Stir until everything is well blended. Then mix in the shredded cheddar and mozzarella cheese.
  3. Warm the tortillas: To prevent cracking, wrap the tortillas in a damp paper towel and microwave for about 30 seconds. This makes them more pliable and easier to roll.
  4. Roll the taquitos: Spoon about 2 to 3 tablespoons of the buffalo chicken mixture onto the lower third of each tortilla. Roll tightly and place seam-side down on the prepared baking sheet.
  5. Bake until crispy: Lightly spray or brush the tops of the taquitos with oil. Bake for 15–18 minutes, or until the tortillas are golden brown and crispy on the edges.
  6. Serve hot: Serve warm with ranch or blue cheese dressing, and don’t forget the celery sticks on the side for that classic buffalo chicken combo.
