Deliciously creamy garlic chicken cooked with spinach and sun-dried tomatoes.
Ingredients

- 2 Boneless, skinless chicken breasts
- to taste Salt and pepper
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
Instructions
- Season the chicken breasts generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Sear the chicken until golden brown, about 6-7 minutes per side. Remove and set aside.
- Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
- Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Bring to a simmer and cook for 2-3 minutes until thickened.
- Add fresh spinach and cook until wilted, about 1-2 minutes.
- Return the chicken to the skillet, coating it in the creamy sauce, and simmer together for an additional minute.
- Serve hot, optionally garnished with freshly grated Parmesan and fresh basil.
